By adding broccoli you only add 24 calories per cup and add a lot of nutrition. Broccoli is considered a superfood and is a good source of Vitamins A and C. Broccoli helps to protect heart health too. Have a little fun with these meatloaf cupcakes. Try adding embellishments to your cupcakes like tomato flowers, shredded carrot or other fun ingredient. Maybe if you call the broccoli mashed potatoes “Monster Mash” (thank you Alexandra Pflug) your kids will love them.
