Does anyone like to prank others on April Fool’s Day? Well this week I wanted to share a recipe to prank your family. Try making this recipe for meatloaf cupcakes. What’s for dinner? Cupcakes! April Fool’s!

The meatloaf is tender and provides 23 grams of protein per serving and the “fool’s” icing is mashed potatoes with broccoli hidden inside. While potatoes have a higher carbohydrate content, they also provide fiber. A medium potato contains 110 calories, 26 grams of carbohydrates and 2 grams of fiber. By adding broccoli you only add 24 calories per cup and add a lot of nutrition. Broccoli is considered a superfood and is a good source of Vitamins A and C. Broccoli helps to protect heart health too. Have a little fun with these meatloaf cupcakes. Try adding embellishments to your cupcakes like tomato flowers, shredded carrot or other fun ingredient. Maybe if you call the broccoli mashed potatoes “Monster Mash” (thank you Alexandra Pflug) your kids will love them.
